
Top and tail a marrow and cut it into inch deep coins. scoop out the pippy fibrous middle. Set the rings in a baking tray, tightly packed. in a frying pan fry an onion some chopped up carrot, sunflower seeds mushrooms and beans, I like foul mesdames but any bean will do… add salt pepper and chopped dill, allow it all to blend together and soften a little in olive oil and water to cover the bottom of the pan. allow it to reduce a little so all the flavours mix and the liquid makes a nice stock. spoon the solid stuff into the middle of the marrow polos. whatever mixture is left over goes into the baking dish so that the liquid cooks the marrow and makes a gravy top each marrow slice with a good strong cheese. cover the tray with silver foil and leave to bake for as long as you are cooking the potatoes that are roasting to go with this meal.
